Chanterelles

 In Nova Scotia wild Chanterelles appear from mid-July to beginning September, earlier than the western variety. They resemble no other mushroom in Nova Scotia that I've ever seen, very easy to recognize in our forests. Most are a deep school bus yellow color when fresh but may fade somewhat as they age. Chanterelles never grow on wood.

​Best time to pick is after a good rain in July-Aug.  Often patches are very large and care must be taken not to step on them. Use a knife to cut the stem. If you find a good patch, best to keep the location to yourself, then return next season.

​Chanterelles are highly regarded for their unique flavour, a real gourmet treat. They make a wonderful pasta sauce but care must be take not to spice the sauce too much because spices can mask the wonderful taste of the chanterelle.
